Are you the mother of a young child, or children, who is about to go back to work? You know it will be difficult on you and your family, but it’s an unavoidable reality, something you need to do to help keep the whole thing afloat financially!

Luckily, there are solutions in place to help you make the transition from stay-at-home mom to working mom. The most important of these is arranging for quality daycare. There are many to choose from, and finding the right one is vital but not the focus of this article. We will instead show you an example of the kind of place we would choose for our young child. When we asked a group of mothers returning to the workforce what their main concerns were, the one that came up the most was preparing meals that were both nutritious and delicious while on a limited-time schedule! With that in mind, here are some tips:

Keep It Simple

Think about meals that only need two or three ingredients, like pasta dishes, stir-fries, and sandwiches, and that can be put together quickly without too much effort. That bowl of soup and grilled cheese sandwich with a side salad they groaned over today will be their go-to comfort food when they grow up, guaranteed, so no guilt! Reserve one day of the weekend for something special that takes more doing, like homemade pizza, and they can help with the doing, which is fun for the whole family!

Stock That Pantry

Planning ahead is going to be crucial when your time becomes limited. Go for a once-a-month shopping trip that will keep your kitchen going until the month following. Start with the staples, dry goods like rice, pasta, and spices, often used condiments, plus canned fruits and vegetables. Use the ‘f-i-f-o’ system, first in, first out, so you don’t end up with products whose expiration dates reach back longer than a year!

A big freezer is your friend; put the meats in there! To freshen things up, you can stop by your local farmer’s market for veggies once a week.

Make Tomorrow’s Dinner Today

While you have everything out on the counter, why not feed two birds with one corn? Just double the recipe! Make the meal twice, one to have tonight and one to stick in the fridge so you can come home tomorrow, unwrap, heat, eat, and relax!
